Ingredients:
6 Chicken Thighs (with/without bone)
1 Leek
2 rashers Bacon, chopped into bits
2 Carrots
1 can Tomato
2 Garlic Cloves
Method:
Turn a saucepan to medium heat and brown the chicken thighs. This holds in the flavour and juices.
Place in large baking dish. Cover with sliced leek, cut carrots, crushed garlic, bacon and tomato.
Bake in oven for 30 mins at 180 degrees. While it's baking, throw in some pumpkin or kumara to roast. Check and stir, and bake for further 20 mins.
