Easy meal options when you can't be bothered

Recently I went back to work a few days a week and have found that some nights I just can't be bothered cooking!

Below are two easy meal options which use frozen or winter seasonal vegetables.


Butter Chicken on Pumpkin


Ingredients:
Butter Chicken Paste (I use Asian Home Gourmet)
2 Tablespoons Butter
3 Tablespoons Tomato Paste
1/2 cup Fresh Cream
500grams Chicken
Pumpkin (this replaces the rice so cook as much as you think you need)
Mushrooms
Spinach (I used frozen)




 




Method:
Cut and Steam Pumpkin
In saucepan, melt butter with butter chicken paste, tomato paste. Heat for a minute then stir in cream.
Add diced chicken and chopped mushrooms and spinach.
Simmer on low heat for about 15 mins, or until cooked.
Throw together on your plate and enjoy!


Meat and Leek Stir fry


Ingredients:
Meat of your choice
Coconut or Olive Oil
Garlic
Leek
Mushroom
Spinach
Salt
Pepper






Method:
Pan fry your meat how you like it. Whilst it's cooking, heat the oil in another pan and throw in crushed garlic. Then add sliced leeks, mushrooms and spinach (I used frozen spinach) - stir fry until cooked how you like them. Place on plate and then add your meat. EASY!
