Warm up on a cold day with hot soup!

Chicken, Bacon and Vegetable Soup

Ingredients:
Leftover Chicken (from a roast or shredded chicken meat)
100grams bacon
500mls Chicken Stock
2-3 gloves Garlic
1 small Onion
4-5 Celery Sticks
1 large Carrot
A few pieces of chopped pumpkin
Fresh handful of Parsley
Salt and Pepper


Method:
In a saucepan heat coconut oil and throw in bacon, garlic, onion.
Cook for a few minutes at medium heat.
Add 500mls of Chicken Stock, chopped Veges, Parsley and leftover Chicken.
Simmer until veges are cooked through, approx 30 minutes
Add Salt and Pepper to taste..
