Silverbeet Quiche

Ever wondered what to do with all that silverbeet in your garden!?

My mother suggested making a silverbeet pie so this is what I came up with, serves 4-6 depending on how hungry you are.



Ingredients:
Silverbeet (8-10 leaves)
100ml Cream
1/2 cup Grated Cheese
Cream Cheese (optional)
10 Eggs
Grilled Streaky Bacon Strips

Method:
Preheat oven to 180 degrees.
Wash, cut and boil silverbeet until soft - then drain and squeeze out the water.
Put into a large bowl with eggs, grated cheese and cream. Mix well.
Poor into a baking dish and place in blobs of cream cheese to taste.
Place Bacon strips on top.

I served with homemade tomato sauce - can of tomatoes which is reduced down for 10mins with salt, olive oil and garlic.
Bake for 30mins (or until cooked).
