Date Banana Muffins - Grain/Dairy Free

Super easy recipe and Whole Life Challenge compliant.
Makes 10 small muffins.

Ingredients:

10 Dates (cut and soften in hot water for 10mins)
1 Medium Banana (mashed)
1/4 Coconut Oil (melted)
2 tsp Vanilla Essence
4 Eggs
1/4 cup Coconut Flour
1/2 cup Almond Flour
1 tsp Baking Soda

Method:

Preheat oven to 175 degrees C.
Whisk dates, banana, oil and essence in a large boil until smooth. Add eggs and mix again. Add coconut and almond flours and baking soda - whisk until smooth. 3/4 fill muffin cups.
Cook for 18-20 mins.
