I had some coconut flour in the pantry that I have been wanting to use for ages but haven't found a decent muffin recipe yet. So I decided to create my own - not bad at all I have to say! A few tweaks and it will be perfect.
Coconut flour is very very dry so my recipe contained only half a cup and 6 small eggs. Combined with almond flour and blueberries, they turned out very moist.
Once it is perfected - I will put it up on the blog! :-)
