Apricot and Chocolate Muffins

I haven't been able to perfect my hot cross bun recipe yet but instead I made these, which are pretty tasty. Definitely a good treat for over the Easter holidays.

Apricot and Chocolate Muffins

Makes 10 muffins


1 large banana mashed
2 eggs
1/4 cup coconut oil
1/4 cup coconut milk/cream
1/2 teaspoon Vanilla Essence

Two Grinds of sea salt
3/4 cup of almond meal
1/3 cup tapioca flour
1/2 teaspoon baking soda
1 teaspoon cinnamon

6-8 cut dried apricots
6 squares 70% chocolate, chopped or 1/4 cup chocolate chips


Preheat oven at 180degrees C.
Mix wet ingredients together.
Add dry ingredients, except for apricots and chocolate.
Combine well then add in apricots and chocolate.

Bake for 20 minutes.
Best eaten when cool.
