It seems like every time I go to the supermarket these days lamb is on special! But I'm not complaining...
This week it was Lamb Legs for $9.99kg and Lamb Loin Chops for $14.99kg.
I love Lamb fat when cooked til it melts so I always have to buy some.
So what did I cook?
There are a couple of old favourites that you can do with a lamb leg. I either cover it in olive oil and smoked garlic salt then roast it OR put it in the slow cooker with a can of tomatoes and fresh rosemary. Both are always good for a warming winter dinner.
This week I roasted it with some vegetables and added steamed spinach and sour cream.
Lamb Loin Chops
Oh the fat... what more do I need to say?? Pan fry or grill them super well and they go with anything. You can also bake them with onion, garlic and tomatoes, cover with tin foil to make them bake/steam.
This week I pan fried them and then did a garlic ginger winter stir fry on the side. Tasted yummy!
