I have some leftover basil pesto from a meat and cheese platter and thought, muffins with pesto! Yummo!
So here is my creation....
Makes 10-12 Muffins
Mix together dry ingredients:
1.5 cups almond flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/3 cup grated cheese
1/4 teaspoon paprika
30 grams cut into pieces ham
In another bowl mix wet ingredients,
40 grams melted butter
80 mls coconut cream (add to butter to cool)
2 Tablespoons basil pesto
1 teaspoon Dijon mustard
2 medium eggs
Spread mixture into muffin tins. Add blobs of cream cheese to the top of each.
Combine the two and mixture well. Add more coconut cream if you think it's too dry.
Bake at 180 degrees C, for 18-20 minutes.
Serve warm, great with pumpkin soup! :-)
