Paleo Cocoa Nut Balls
Ingredients:
150 grams Raw Walnuts
150 grams Raw Almonds
50 grams Desiccated Coconut
20 fresh dates (if dried, soak in hot water for an hour before using)
2 Tablespoons Cocoa Powder
2 Tablespoon Melted Coconut Oil
2 Tablespoons Melted Honey (or Agave)
1/2 teaspoon Cinnamon
1 Tablespoon Vanilla Extract
Throw dry ingredients into the blender, once crumbly add dates and vanilla and blend again.
Roll into balls and refrigerate well before serving.
Hi Sara I'm hypoglycemic do you think your cocoa nut balls would be ok with the dates? I'm concerned about blood sugar spikes and this is the whole reason I'm going carb free. Any ideas what I could swap most of the dates for? Maybe 5 dates with coconut oil?
