Primal Savoury Breakfast Muffin


I am a big fan of cheese and bacon muffins so here is a recipe which gives you that fantastic flavour in a primal muffin!

Ingredients:

Primal Savoury Breakfast Muffin
1 ½ cups almond flour (meal)
½ teaspoon of salt
¼ teaspoon of baking soda
¼ teaspoon of paprika
¼ - ½ cup chopped ham or cooked bacon
½ cup grated cheese
50 grams melted butter
¼ cup coconut milk/cream
3 medium eggs
1 teaspoon Dijon mustard

Optional – chopped tomato for decoration

Method:

Preheat the oven to 180 degrees C.
Combine the dry ingredients in a medium bowl, mix well.
Add coconut milk to melted butter to help cool it, and when you then it’s at a good temperature –
add eggs and mustard. Beat with a fork to combine.
Combine wet and dry ingredients and mix.

Place into lined muffin tins; add chopped tomato for decoration on top. Makes 10-12 small muffins.

Bake for 15-20 minutes, depending on your oven.

    1. No worries - These are one of my favourites! Plus Peter doesn't really like cheese muffins, so I actually get to eat them :-)
