Paleo Coconut Porridge - Dairy and Grain Free

Missing your hot porridge in the morning? Sometimes there is nothing better on a cold morning! Most of the alternative recipes are nut based and therefore expensive or simply too sweet for my liking.

Give this Paleo Coconut Porridge I created today a go....



Paleo Coconut Porridge - serves 1, prep time 5 mins.

Ingredients:
3/4 cup coconut milk (tip, to save money buy coconut cream and dilute with water, 1 can + 2 cans water)
4 Tablespoons Desiccated Coconut
2 Tablespoons Almond Meal or other Nut Flour
1 Tablespoon Ground Linseed
2 Dates, chopped.

Method:
Heat milk til warm then throw in other ingredients to simmer well for 2 minutes. Top with frozen berries.

  1. will try this, it's one of the things I do miss sometimes, though most mornings a combo of eggs and veges goes down well there are some days that porridge is just the thing!
    do you use quinoa at all?
